Hubby and I have always loved to cook together. When we moved into our first house we made something different almost everyday! Somethings were great... some where not. I'll never forget when he tried to feed me garlic eggs... yea.
Since we both worked, our crock pot was a life saver. It was February when we moved in together so we were always making warm savory dinners and chili was an obvious choice. I think this was the second dish we ever made and it has been a favorite ever since.
One day, my husband's truck broke down so my brother in law and father in law came down to help fix it. I made them this very dish for lunch and my brother in law raved about how it was the best chili ever. That next Sunday I was asked what the secret was and if it was just "McCormick"... lol, no. This is not your traditional McCormick chili.
Anywho. When I saw it on The Chew this week it really made me want mine! Mine has a little more to it because I like a chunky chili so you could change it up to meet your needs. ;)
(FYI: We do not drink and neither of us just love the taste of beer.
Don't let it scare you away from trying this if you feel the same way.
It gives the chili a very deep rich taste that we LOVE)
Gather all listed ingredients and add to crock pot. Simmer on low for 5-6 hours!
Broth of choice
1 bottle of beer
8 oz tomato sauce
2 Tbs tomato paste
1 med red onion, diced
1 med zucchini, diced
1 cup corn
1 red pepper, diced
3 cloves garlic, minced
2 cans of beans, rinsed and drained
(I use black and kidney)
After you have added all this to the crock pot,
add enough broth to make it the consistence that you would like.
2 t cumin
1 T chili powder
1 t dried oregano
When it is done, I top with avocado and lime juice.
Sometimes Hubby likes it over cornbread and adds cheese!
