Pea and Basil Pesto

Every week our family tries a new recipe.
Now every Friday, I will be sharing that new recipe with you for our "Foodie Friday"!


This week we tried Pea and Basil Pesto. This is a mix between two recipes that I like. The color is not my favorite but it taste good and the kids liked it! ;) I served it with grilled chicken.


1 pound ziti or penne pasta
1 1/2 cups peas (thawed if frozen), divided use
1/2 cup edamame
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh chives
2 tablespoons extra-virgin olive oil
1 teaspoon lemon juice
Salt and ground black pepper, to taste

Cook pasta according to package directions. Drain, reserving about 1/2 cup of the cooking water, then return the pasta to the saucepan.

Meanwhile, in a food processor combine 1 cups of peas, edamame, cheese, basil, chives, olive oil and lemon juice. Process until smooth, about 30 seconds. Taste, then season with salt and pepper.

Add the pesto and remaining peas to the cooked pasta and toss to coat. The residual heat of the pasta will melt the cheese and make the pesto smoother. If you prefer a looser sauce, add some of the reserved cooking liquid. Serve hot or at room temperature.

I am going to have to give this a try! I love pesto ... usually make it with either basil or spinach but have never thought to try peas!!
